I made this pizza over a month ago and am just getting to publishing now. Actually, I’ve made this pizza since then and it was every bit as good as the first. This recipe came about by accident. I had ingredients in my fridge from multiple meal delivery service recipes that I hadn’t made. I really wanted pizza so I pulled together this happy accident. This is now my new favorite pizza.
Store-bought pizza dough from the cooler
1 Yellow onion
1/2 Cup plain goat cheese
5 TBSP Heavy cream
4 Sprigs of Fresh Thyme
2 TBSP Marsala cooking wine
1 Package Fresh Mozzarella
Salt & Pepper
Handfull of baby arugula
Preheat pizza stone in the oven as high as it goes (mine goes to 550°).
Slice the onion into thin strips. Heat about 1tbsp olive oil in a frying pan on medium high. Add the onions and cook about 4 minutes until translucent. Add Marsala and cook another 2 minutes. Add about 2 TBSP of water and reduce heat to medium low. Cook while stirring until onions caramelize and remove from heat and set aside.
In a small bowl, combine the goat cheese and heavy cream. Whip until smooth. Remove thyme leaves from sprigs of thyme and mix in with the goat cheese. Tear desired amount of mozzarella into small pieces.
Roll out the pizza dough on a lightly floured pizza paddle. Spread goat cheese mix evenly across the dough. Top with onions and mozzarella. Carefully slide onto the pizza stone in the oven. Cook until cheese bubbles and edges are slightly browned.
Remove from the oven and set on a cutting board. Top with fresh arugula and drizzle with olive oil. Top with a sprinkle of kosher salt and season with fresh cracked pepper to taste.
