So, avocado toast isn’t new, but it certainly seems like the next big thing since kale. It’s seriously SO good. It’s so good that I’ve been to a restaurant and paid like $13 for it. The best part about it, it’s about the easiest thing you could make besides cereal and it’s also very versatile. You can do about 100 variations with different toppings, breads, sauces…you name it. Here is probably the most simple.
- Dark Rye Bread
- Good quality extra virgin olive oil (always good to have a bottle of the really good stuff on hand for this type of thing)
- Kosher or Course sea salt
- Black pepper
I can’t believe I’m even going to type these instructions because it’s so crazy simple, but here we go. Toast the bread. Slice the avocado in half and remove pit. (Please be careful). Using a spoon, remove the avocado flesh from the skin and then slice into thin strips. Place the avocado strips on the toast. Drizzle with olive oil and sprinkle on salt and pepper. That’s it. Seriously- that is all there is and you have a meal that is delicious, satisfying and full of good fatty acids.
If you want to get fancy, try topping with a sunny-side up egg, romesco sauce, heirloom tomatoes and cheese or bacon just to name a few ideas. (All of those together would also be fantastic).
