Spicy Turkey Sausage with Broccolini

It’s so easy to be lazy on a weeknight. You work hard all day and all you want to do is sit down, eat a good meal and turn your brain off for some mindless television. That doesn’t mean you have to order a pizza or crappy take out though. Here is a really easy, quick and flavorful dish that doesn’t take a lot of effort and will have you taking your place as a couch-zombie in no time.

4 links of natural Italian turkey sausage
1 bunch of broccoli rabe
1 medium onion
1 tsp. Kosher salt
1/2 tsp freshly ground black pepper
Pinch red pepper flakes
1 tablespoon olive oil
Splash (about 1/8 cup) of beer

Slice the sausage links into 1 inch pieces.

Heat a frying pan on medium high heat. Saute the sausages until cooked through and browned on all sides. Remove the sausage from the pan and set on a plate with a paper towel.

In the same pan, heat olive oil on medium heat. Add the onions and saute about 2 minutes. Add the broccoli rabe, beer, salt, pepper and red pepper flakes. (If the sausage is already a hot Italian sausage, use the red pepper flakes sparingly depending on how much heat you like.) Saute until the broccoli rabe is fork tender but still a bright green color. All of the beer should be cooked off. Add the sausage back in and mix, remove from heat and serve.
